About this wine
Vaulorent sits just above the Grand Cru vineyards of Chablis. It is essentially part of Fourchaume but has a higher clay content to its soil and is generally considered a superior vineyard - in fact, some call it the finest of the Chablis 1er Crus.
100% Chardonnay from vineyard 43 to 63 years old, southwest facing in Kimmeridgian soil of clay and limestone, oestrea.
Fermented and aged on fine lees for at least 12 months. Twenty percent in new oak barrels and the rest in temperature-controlled stainless steel tanks. 7500 bottles produced.
About the grape
Chardonnay is the most popular wine variety in the world - and in the US. Winemakers love the green-skinned grape as well because it’s so easy to grow and adaptive to many different production techniques. Grown everywhere, Chardonnay’s greatest expressions are widely believed to come from Burgundy. Indeed, this is believed to be where the grape originated. Chablis, in Northern Burgundy and Champagne also offer superlative examples of Chardonnay.
A deeper nose than the village Chablis with intriguing notes of herbs and tobacco (the latter likely from the oak). Medium bodied and offering floral flavors and a good dose of citrus. This is young and INTENSE. It also is amazing to taste and explains why, most vintages this is our favorite Chablis from this producer. There are great rewards down the road but drink it now as well. It's quite a ride. This should mature nicely for 10-15 years.
On your table
Don't battle with the intensity of this wine in its youth. Pair it with a simple dish of roast chicken with herbs and lemon. Serve at about 50 degrees.
