Those of you who have had Guiton’s in the past, know what a terrifically enjoyable wine this is. And in 2024, we have something like the perfect vintage for it. It’s crisp, racy and laser-focused. This iteration only strengthens our opinion of the beauty of it paired with sushi and if you drank wine as an aperitif, this is a stellar choice.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout this wine\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e100% Aligoté from a single vineyard in Bligny-Les-Beaune planted in 2003. The soil is gravel and sand. The yield was just 35 hl\/ha even though Guillaume had enough grapes to produce twice that amount. Hand-harvested, whole grape clusters were pressed, then fermented in steel tanks for 9-12 days. He had vacant 4-5 year-old oak barrels, so he put the Aligoté in for 4 months. The aging continued in tank and 3 months in bottle before bottling in February, 2023.\u003c\/p\u003e\n\u003cp\u003e  \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout the grape\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAligoté \u003c\/strong\u003eis the third most planted grape in Burgundy. It is easy to cultivate and thrives in cooler locations than Chardonnay and Pinot Noir. Naturally, high in acidity, Aligoté is under-appreciated, perhaps as a result of its traditional role mixed with Crème de Cassis in Kir.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout the Vintage\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAlmost a polar opposite to the lush, abundant crop of the prior year, 2024 was a brutal and vindictive vintage. Persistent spring rain threatened widespread mildew. The now familiar April frost occurred and there were localized hail storms. If you’re dealing with poor, or even mediocre farmers\/producers, this was a vintage to skip. Aging is 12 months in old oak barrels. Somehow we forgot that the quality and value of this village gem was an important factor in enamoring us to Guiton. Lest you think that this is merely a short-term pleasure, we checked on the 2016 recently. It was splendid and had plenty more in the tank. Burgundy cognoscenti will tell you that Savigny is a great source for wines that outperform after extending aging.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout this wine\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eA village wine from Pinot Noir.  Guiton has plots in Les Saucours and Les Fourneaux.  The exposure is east and the soil is sandy-clay and limestone-clay.  The vines were planted in 1959, 1963, 1988 and 1989.  Harvesting is manual and mechanical and yields are 45 hl\/ha.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eFermentation takes 20 days with maceration (cold to start), including pigéage (punching down the cap).  The wine ages in oak barrels (15% new) for 15 months.  A light filtration is done before bottling if necessary.  Almost 15,000 produced each year.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eSavigny-Les-Beaune in the hands of a skilled vigneron can produce wines that overachieve its modest reputation and can be surprisingly long and well lived. Eighteen months later from bottle, we may be experiencing the finest La Corvée we have ever tasted from Guiton. The nose is so beguiling. On the palate, there’s the usual Ladoix sultry, lush and velvety red fruit. It has noteworthy grip with super-smooth tannins. In years past, we’ve loved how sexy this wine can be. That’s true here as well, but this vintage has real gravitas. Superb!\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout this wine\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eLa Corvée is a 1er Cru vineyard in the appellation of Ladoix, not far from the Grand Crus on the Hill of Corton. Guiton has a small south-facing plot.  The soil is rich with Comblanchien limestone from a large quarry on the hill above it.  The interspersed clay and stones make for excellent drainage  The vines were planted in 1924, 1959 and 1971.  Harvesting is by hand.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eFermentation of the Pinot Noir takes 20 days with maceration (cold to start), including pigéage (punching down the cap).  This year, Guillaume used whole cluster in 1\/3 of the Ladoix grape bunches.
