Whereas a Rosso from one of those appellations might be from declassified grapes from prime vineyards, Chianti Colli Senesi are generally next best sites. \u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eInnocenti's Colli Senesi is 80% Sangiovese blended with Canaiolo Toscano. The age of the vines 8-23 years planted in medium clay soil near the Innocenti farm in Montepulciano. Fermentation and maceration is on the skins for about 10-12 days. Rather easy to drink for a \"young\" Innocenti Vino Nobile but with no less long-term cellar potential. They are handpicked and collected in small crates. Only the best grapes that are ripe and have tough skins from sparse clusters are selected. They are moved into the farmhouse in which Vittorio grew up, to dry naturally in crates for about about 5 months, and then are pressed.\u003cspan\u003e \u003c\/span\u003eThe must obtained from this process - the Madre (mother yeast) -is fermented in small, 50-125L barrels called Caratelli.
