About this wine
A village Chablis that’s 100% Chardonnay from vineyards near Fontenay Près-Chablis in Kimmeridgian limestone soil. Most of the vines are 15-25 years old with the oldest 58.
Vinification and aging is on fine lees during 10 months in temperature-controlled stainless steel tanks. Measured filtration (depending on wine balance).
About the grape
Chardonnay is the most popular wine variety in the world - and in the US. Winemakers love the green-skinned grape as well because it’s so easy to grow and adaptive to many different production techniques. Grown everywhere, Chardonnay’s greatest expressions are widely believed to come from Burgundy. Indeed, this is believed to be where the grape originated. Chablis, in Northern Burgundy and Champagne also offer superlative examples of Chardonnay.
Our Tasting Impressions
The nose is deep, bright and pure. Light bodied but with a dimension of texture that gives the impression of creaminess and greater weight. Flavors of autumn fruits and spices. Unmistakably Chardonnay and clearly made in steel tanks. I have frequently preferred 2016 to 2017 in Chablis but this might be the exception - and I enjoyed the 2016. A pleasure to drink no but no rush.
On Your Table
It might be interesting to try this as a counterpoint to roasted butternut squash and some crumbled bacon and fresh thyme. Enjoy at cool cellar temperature.
