Our tasting impressions

This is a new rendition of this wine and easily the best we have tasted of it. Pale color with a beautiful strawberry nose. It has terrific length, pure fruit flavors and is really very elegant. A splendid Rosé to drink now or cellar mid-term.

About this wine

The 25 year old Grand Cru vineyards in clay and limestone for this Rosé are from Bouzy.  The composition is 65% Pinot Noir and 35% Chardonnay harvested in 2014.

 

Maceration on the skins for 52 hours then slow, gentle pressing using gravity-flow techniques. Maillart produces the red wine for his Rosé in oak barrels from Chateau Margaux.  Vinification in temperature-controlled stainless steel vats and 50% in oak barrel.  Disgorged May 2019. Dosage: 6 g/l.

 

On your table

The skin contact creates added body so consider richer, fattier foods. We suggest slow roasted salmon or veal scallopini in a butter pan sauce. As an aperitif, serve at about 45-50 degrees or with a meal at 50-55.
